Gaggia Classic Evo Pro Overview
The Gaggia Classic Evo Pro is a 100% Italian single-boiler dual use espresso machine and the definitive choice for new home baristas. In 2023 Gaggia introduced the Classic Evo Pro which built upon that foundation with a new OPV for 9 bar extractions, updated steel components and a protective coating to prevent corrosion and scale formation in the boiler. Similar to prosumer machines the Classic Evo Pro is equipped with a 3-way solenoid valve, a 58mm commercial portafilter and a commercial style steam wand.
Features and Benefits
The appeal of the Gaggia Classic has always been its adherence to specialty coffee standards. Espresso is now brewed at 9 Bar thanks to an update to the OPV spring. To improve longevity without sacrificing quality, Gaggia left the Classic’s brass brew group alone but updated the group cover with a new polished steel surround that won’t peel or flake over time. Gaggia also updated the 58mm commercial portafilter, exchanging chrome-plated brass for stainless steel to better match the group and eliminate visual imperfections that could occur with the previous design.
Externally, little has changed apart from the more lustrous group cover. The Classic Evo Pro is still housed in a one-piece steel frame and features a suite of high quality rocker switches and corresponding LEDs to operate the machine. After brewing, a dry and easy to knock out puck is possible thanks to the 3-Way Solenoid valve which discharges wastewater directly into the drip tray. The commercial 58mm stainless steel portafilter retains heat for temperature stability and is compatible with a wide range of premium portafilter baskets, tampers, and other preparation accessories. For frothing milk the Classic Evo Pro uses a commercial style stainless steel steam wand.
Internally the Classic Evo Pro rests on a more solid foundation with an updated mounting plate to secure the pump and boiler and reduce noise generated by vibration. Additionally, the boiler itself was given special attention and is now protected by a food safe inert anti-scale coating to help prevent the formation of limescale and extend the life of the machine.

My new Classic Pro arrived an hour ago. It was straightforward to unbox and set up, simple to connect the reservoir water filter, and just like that, it’s dialed in.
I cut my teeth on a 1991 Gaggia Classic my father-in-law gave me in 2018. So it was an easy decision to go with this upgraded version; it is a solid step up.
Besides adding the BWT Bestcup water filter package, I upgraded some of the stock parts. I bought a Gaggia bottomless portafilter, an excellent tool for learning how to pull better shots. Also swapped out the filter basket and shower screen for IMS’s 15g basket & nanoquartz screen for the shower holding plate. Plus, a new silicone group gasket; the stock one feels very stiff.
I strongly recommend investing in a good grinder. I have the Baratza Sette 270Wi. Awesome features, looks cool, and it weighs the shot and does multiple grind sizes, from espresso to Aeropress to drip. This is definitely worth the investment.
Like all my other purchases, the HFC ordering process and delivery were effortless. Additionally, y’all’s educational videos have been exceptional.
Looking forward to enjoying this machine for many years to come.

I love the new Classic Pro. This replaced an 8 year old classic pro that I used daily until the internals corroded to a point of no return. The new machine seems to have quicker heating, and a stronger pump. I’m still getting the hang of the new steam wand design but it’s getting better.
